Avocado Dip

A very easy recipe –

Mash 1 large (or 2 small) avocados with a fork.

Add
• 1 clove of garlic
• 1/4 teaspoon chilli powder
• 1 small carton of natural yoghurt
• a generous tablespoon of mayonnaise

Quick Orange Cake

What you’ll need

• 1 1/2 cups self-raising flour
• 3/4 cup sugar
• 3 tablespoons butter
• 3/4 cup milk
• 1 egg
• pinch of salt
• 1 teaspoon grated orange rind

Method

1. Sift the flour and add the sugar.
2. Melt the butter, add the milk, orange rind, beaten egg and salt. Fold into the dry ingredients and turn into a greased loaf tin.
3. Bake in the oven at 180°C for about 30 minutes. When cold, top with orange icing if desired.

Chocolate balls

What you’ll need

• 1 packet milk coffee biscuits – finely crushed
• 2 flat teaspoons cocoa
• 1 tin condensed milk (400g)
• 1 cup coconut

Method

1. Mix all the dry ingredients together.
2. Mix in the condensed milk.
3. Roll small balls in coconut.

Enjoy!

Cheese Soup

What you’ll need

• 1 tablespoon butter
• 2 onions, 1 carrot, 1 stick celery
• 1 tablespoon plain flour
• 1 litre beef stock
• Salt, pepper, paprika, parsley
• 250g grated cheese

Method

1. Fry chopped vegetables in butter until soft.
2. Stir in flour. Add stock and bring to boil. Season.
3. Cover and simmer for 30 minutes.
4. Sieve or blend soup then add cheese.
5. Reheat and add parsley. Serve and enjoy!

Apple Crumble

What you’ll need:

• 6 cooking apples
• 1/2 cup honey
• 1 cup wholemeal flour
• 1 cup oatmeal
• 1/4 cup wheatgerm
• 1/4 teaspoon salt
• 1/2 cup raw sugar
• 170g margarine or butter

Method:

1. Peel, core and slice apples.
2. Place in oven proof dish. Pour honey over.
3. Put flour, oatmeal, wheatgerm, salt and sugar in bowl. Add butter until crumbly – then spread over apples.
4. Bake in moderate oven for 1 hour or until golden brown.

Easy Shortbread

What you’ll need:

• 250g butter
• 1 cup cornflour
• 1 cup icing mixture
• 1 1/2 cups plain flour
• pinch of salt

Method:

1. Cream the butter and sugar in a mixer.
2. Add sifted flours and salt.
3. Roll dough into two sausage shapes 2 cm in diameter, wrap in plastic wrap, then refrigerate until hard.
4. Cut into slices 1 cm thick.
5. Cook at 180°C for 10–12 minutes. Take out before they start to brown.

Enjoy!

Chocolate Mint Slice

Base:

4oz. margarine, 1oz.  dark chocolate, half a cup icing sugar, 1 cup plain flour.

Filling:

1 tin sweetened condensed milk, one and a half cups coconut, (half a cup of chopped walnuts).

Topping:

2 to 4 oz. melted dark chocolate, peppermint essence.

Melt margarine and chocolate over hot water.
Remove from stove, fold in icing sugar and flour, mix well.

pread over base of foil-lined 7 x 11 pan.

Bake in moderate oven 10 minutes.

Prepare filling, combine all ingredients well.  Spread over base.
Return to oven, bake further 25 minutes or until filling is set.

Allow to cool in tin.

Melt chocolate over hot water, add essence.
Spread evenly over filling.
Chill, cut in finger lengths.
